This is my recipie for very simple but sensational salad. Everytime I make this people ask for the recipie. If like me, you have lots of beetroot from your garden at this time of year this is one for you.
The Science: Beetroot contain non-haem iron which needs a dose of Vit C to release it so that it can be used by the body, so this is very healthy energy giving recipie too!
(I made this all the time when i was pregnant and had a very healthy, happy, full of energy pregnancy.)
- Grate about equal measures of beetroot and carrot. (one medium beetroot and 1 medium carrot.
Squeeze a half a lemon.
Pop some yellow mustard seeds in a frying pan with enough oil. (if you haven't done this before, make sure you have a lid for the pan... the mustard seeds pop like popcorn!)
Combine the ingredients and enjoy.
Sometimes I like to put in a drizzle of toasted sesame oil and/or a smidgen of honey.
If you don't like beetroot, just try it with grated carrots.
If you don't have yellow mustard seeds, just toast some sunflower seeds.
This salad keeps well overnight so don't worry if you have some left over.
