Banana Cake/Muffins

Ingredients:

The 'wet' ingredients:
4/5 Large really ripe bananas (mashed)
1tsp vanilla essence
100g of melted butter
1 egg (slightly beaten)

The 'dry' ingredients:
200g flour
80g white sugar
1/2tsp salt
1tsp of baking powder

Handful of chopped walnuts (optional)


-Preheat the oven to 175'C.
-Grease your baking tray or prepare your muffin cups.
-Mix all the wet ingredients in one bowl.
-Mix all the dry ingredients in another bowl.
-Mix the 'wet' and 'dry' mixtures together and add the walnuts.
-Transfer into the baking tray and straight in the oven for 35 minutes for cake and 15 minutes for muffins.
-Check if cake is ready with a skewer==>skewer comes out clean.

Tips: After adding all the ingredients together, try to get the mixture into the oven ASAP as the baking powder does not rise as well when it comes in contact with moisture.
