In my veg box this week I got fennel bulbs so I went hunting for a fennel recipe and found this idea in my At Home with Jamie Oliver Cook Book.
You will need:
I fennel bulb
Olive Oil
1 Lemon
Sprig of thyme and rosemary
Tin Foil
Make an envelope using your tin foil, it should be well sealed and able to withstand the heat of the bbq. Slice your fennel and pop into foil bag, squeeze in the juice from half a lemon, and then pop the lemon half in with the fennel. Add in the sprig of thyme and rosemary and a good drizzle of olive oil, season with salt and pepper and then seal the bag. Place on a medium to hot bbq until cooked, about 25 minutes.
