This soup is a firm favorite of Cully's daughter Aoibheann. She loves nothing more than coming in from the park and having a warming bowl of Chicken soup.
You will need
100g Cooked Chicken torn up into little bits
100g Onion
130g Potato
240g Carrot
30g Celery
50g Leek
45g Butter
800g Water
1 litre Vegetable of Chicken Stock
40g Cream
Salt and Pepper
Melt the butter in a saucepan with a tight fitting lid. Sweat the onions, celery and leek until soft but not coloured. Add potato and carrot. Season with salt and pepper. Sweat for another five minutes or so, until the vegetable are beginning to soften, add the stock and simmer until veg are cooked through. Liquidise the soup, add the cream and chicken and then liquidise again, but not too much as it will make it go grainy. Pop back on the stove and heat through. Serve it with a blob of cream and some fresh chopped herbs or maybe a few croutons.

how much saturated fat is in one packet portion?
I am living in Maine in the United States and I spent 5 months in Cork Ireland studying and loving your soup. One of these says I will try the recipe and see if I can even come close to the greatness of what I had over seas. Thank you for being wonderful!
Confused with the 800g of water , can you please let me know the measurement in litres please.
800g of water = 800ml
Just wanted to say thanks a million for your gorgeous soup,it has saved me many times in the past few weeks,seems to be the only thing i have been able to eat during my pregnancy,suffering from hyperemisis..Anyway I feel it has given me back my readybrek glow!!!

You're right - there seems to be a mistake. You only need the litre of chicken stock- not the 800g as well. Sorrryyyyyyy. Sully
