Ingredients:
500g minced chicken (pre order with your butcher)
splash olive oil
1 onion finely chopped
1 roast red pepper finely chopped
1 large clove garlic minced
1 inch ginger grated
1 tbs soya sauce
1 tbs sesame oil
1 tsp fish sauce
1 tbs sweet chilli sauce
Place olive oil, onion, garlic, and ginger in a saucepan over a low heat, cover and sweat for five, ten minutes or until the onion is translucent. Be careful not to burn the garlic, as it becomes bitter. Leave to cool.
In a large mixing bowl add all the ingredients and mix well with your hands.
To taste and check seasoning fry off a teaspoon in a frypan and add more soy sauce or sweet chilli if you think it is needed.
To cook heat a little olive oil in a fry pan and make patties any size you like. Make sure to cook all the way through. Rare chicken is not so nice.
I make these quite small, the size of a two euro coin as my kids love them, but you can also make them hamburger size and have them in toasted pitta bread.
I also quite often hide cooked left over veggies in them. I just finely chop cooked carrots or peas or corn ect.
If you make in a big batch they freeze really well. I tend to get a kilo of mince from the butcher.
