Ingredients:
1 medium onion, peeled and chopped
2 cloves garlic, peeled and crushed
2 fresh green chillies, crushed or finely chopped
224g chicken breast, chopped all skin removed
224g can chopped tomatoes
1 tsp tomato puree
1 lemon or lime squeezed
1 tsp dried oregano
2 tbsp fromage frais
3 tbsp cooked boiled rice per person
Dry-fry the onion, garlic and chillies until softened.
If the mixture begins to stick add 1 tbsp of water.
Add the chicken and stir continuously for 4-5 minutes.
Stir in the tomatoes, tomato puree, lemon or lime juice and oregano.
Bring to the boil, reduce the heat, and then simmer for 20 minutes.
Remove from the heat and stir in the fromage frais.
Serve immediately with boiled rice, and/or salad.
