Ingredients:
Packet of frozen Seafood mix (Prawns, Squid, Mussel meat, Calamari, etc) or you can buy fresh from the fishmongers.
approx 5oz's Plaice and or Haddock
approx 5oz's Salmon
Approx 5oz's Smoked Coley
1kg Mashed spuds
1 medium Red Pepper chopped
1 medium Onion chopped
2oz's Mushroom chopped
White Sauce (Packet or made from a roux)
2 Cloves Garlic crushed/chopped
Paprika
2-3oz's of grated mature irish cheese
Salt & Black pepper
Teaspoon of butter
I make this approx once every couple of weeks. Tasty out.
Peel the spuds, boil for 20-25 mins, mash 'em. Place the Salmon, Coley, Plaice in Tinfoil, cook in the oven for 20 mins while the spuds are boiling.
Boil off the seafood mix as instructed on the packet just before you mash the spuds.
Fry off the onion, mushroom & red pepper in the butter Make your white sauce as per packet and add a little ground black pepper.
Now get a very large oven dish, pour in the white sauce and veg, break the fish into it, not too small about 1 inch chunks, add the seafood mix, stir once gently so as not to break up the fish.
Layer the mashed spuds on top, add the grated cheese over the spuds, add a pinch of paprika.
Stick it into the oven @ 180 degrees for 15-20 mins until the cheese is slightly browned.

The above ingredients are for 6-8 people, adjust amounts to suit.

Hey Kevin and Lyonsie. That sounds nice, love fish pie- and that recipe sounds nice. The only thing I think I might add would be cream to the sauce. I love my fish pie to be good and creamy. It kind of binds everything together. Looking forward to seeing you other recipes. Thank you
