Ingredients:
4 mugs of chopped carrots
1 mug of chopped onions
A teaspoon of honey
A knob of butter
5-6 cups of stock
Chopped coriander herb
Salt and pepper
The trick with this is good carrots. Buy the freshest ones you can get, preferably still dirty with the green stalks still on them from the local farmer.

Sweat the onions gently in the butter with salt and pepper until soft. Add the honey and then the carrots. Cover and gently sweat some more until beginning to glaze. Add the stock, cook until everything is soft. Season, then pure in a liquidiser really well, then if you have time sieve to get a silky smooth texture.
Add chopped coriander just before serving.
Tip - USE THE BEST CARROTS YOU CAN GET. It's amazing, buy them off a farmer or at a farmers market for an amazing result. Buy the coriander there too! Oh, and honey is not essential
(unless your looking for a cuddle!)

Hi there- it really depends on how much you like coriander- but about a dessert spoon of chopped coriander or a hand full. Happy cooking. Sully
I love this soup! most amazing soup I've ever tasted, nothing more comforting! how many does this recipe serve?
loving the recipes , which stock do you use in this recipe ??
Ahhhh- now that's one of the only secrets
we have. It's an organic vegetable stock. If you've got the time and energy try making a homemade stock, otherwise any good quality stock cube will do. Sully
Thankyou for reply , i will buy and taste then il try at home
Best soup ever!!!! Is it ok to live off??? I mean will i get fat
Hey Mysterious critic. The honey, carrot & coriander soup has less calories than a banana! But don't eat too much of it as you'll get tired of it. We were talking about this last night in relation to us men mainly and how if we like something we just eat it constantly, then we get bored and never eat it again!!! I know I'm guilty of this sometimes- especially with chocolate bars
In all seriousness the carrot soup is 1.6g of fat/100g so it is particularly low fat. If you do have any other questions don't hesitate to ask.
