Ingredients:
5 Mission® Corn Tortillas
1 pound Ground Beef
1 medium Onion chopped
2 1/4 ounce can sliced Olives drained
10 ounce can Enchilada Sauce
2 cups Cheddar Cheese grated
1/2 cup Water
1. Brown ground beef with onion. Drain and add enchilada sauce, water and olives.
2. In a round 2 quart casserole, alternate layers of tortillas, meat sauce, and 1/2 cup cheese. Sprinkle remaining cheese over top. Cover and bake at 400 degrees F for 25 minutes.
3. Remove and allow to stand 5 minutes. Cut into wedges (Optional: garnish with sour cream).
