Mad Hot Indian Madras Curry

Ingredients:

800g of Lean Diced lamb, Chicken or Beef
1 Large Onion - Chopped Chumky
1 Medium Tomato - Sliced
2 Cloves of Garlic - Crushed and chopped
Half Tsp of Fenugreek Spice
Half Tsp of Cumin spice
Half Tsp of Coriander spice
Half Tsp of Turmeric
5 to 6 Red Chillies - Chopped
Tsp of Crushed dried chilies
280g Jar of Madras curry paste
200ml of water
600g Basmati Rice
Pinch of Salt
Tbsp Olive oil
5 Naan Bread (Garlic & Coriander is my Fav)
or Pitta Bread is nice too


Brown off the Lamb for 5 mins in Olive oil
Add Chunky chopped Onions & Crushed Dried Chllie
Add 2 Cloves of Garlic, Fenugreek, Cumin, Corriander & Turmeric
Add chopped chillies
Cook for a further 10-15 mins on medium heat
Add Jar of Madras curry paste, and 200ml of water
Also add Sliced tomato
Cook for a further 10 mins

Cook Basmati rice as per instructions on the packet with a little salt
Heat Naans or Pitta's as per instruction on Packet

Feeds 5 to 6 hungry people
