Summer Luncheon in aid of Cork Cystic Fibrosis at Cork week
Marinated Boned Leg of Lamb for BBQ
1 leg of lamb, boned by butcher.
1 plastic bag
Salt
Yogurt Marinade for Lamb.
Makes 600ml.
500g pot of natural yoghurt
4 tblsp extra-virgin olive oil
2 large garlic cloves, crushed
2 tblsp mint leaves, freshly chopped
Freshly Ground pepper
1-2 tblsp ground cumin
1-2 tblsp coriander seeds
Method
Mix together, grinding spices if necessary.
Put into plastic bag with lamb.
Leave in fridge over night
Just before putting on the BBQ, sprinkle with a little salt.
Cook to your taste, about 30 mins for pink.
