Mayonnaise

I love homemade mayonnaise and this is how we make it. We had it with a kilo of prawns on Saturday and it was delicious:

Get 2 really fresh and good egg yolks (leave in a tiny bit of egg white from one of the eggs as this makes it lighter)

Add salt, pepper and a teaspoon of mustard (you can use any- we used colemans on Sat which is always yummy)

Then add sunflower oil slowly to the egg yolks whisking the whole time. You'll probably add about half a pint for 2 egg yolks, so it's quite a bit, but keep tasting it)

The add a good amount of olive oil- again to taste.

If you like you can add any of the following combinations of herbs:

1) Just chervil

2) Dill + extra mustard + a tiny bit of sugar

3) Chives

4) Parsley

5) Parsley + garlic

6) Fennel

7) Tarragon

Cool Tarragon + horseradish + garlic = this is yummy for beef
