Ivan and I did this at the Summer Luncheon in aid of Cork Cystic Fibrosis at Cork Week
Myrtles Old-Fashioned Salad with Shanagarry Cream Dressing.
Serves 2-4
Lettuce leaves
2 hard boiled eggs, quartered
2-4 tomatoes
16 slices cucumber
2-4 sliced radishes
4 tiny spring onions
Sprigs of watercress
Chopped parsley
This is lovely presented on a wide salad bowl, starting off with the leaves and then building up to a chunky salad.
Shanagarry Cream Dressing 2 hard boiled eggs1 level teasp dry mustard
Pinch of salt
1 tblsp dark soft brown sugar
1 table spoon malt vinegar
50-125ml cream.
Cut the eggs in half, sieve the yolks into a bowl, add the sugar, salt, mustard.
Blend in the vinegar and cream.
Chop the egg whites and add some to the sauce (or add straight to salad).
