Oat Shortbread biscuits

Ingredients:

You will need:

275g oats
100g plain flour
150g caster sugar
1/2 tsp bread soda
1/2 tsp salt
225g butter


This is the easiest biscuit recipe in the world, perfect for after school treat or to entertain your young ones.  Make the biscuit dough and let the kids cut out the shapes, Aoibheann and I made love hearts and ducks the other day.  Great fun.

Preheat the oven to 180 degrees Celsius

Pop the oats into a  food processor and whizz until they are quite fine, add the remaining ingredients and whiz again until the dough comes together.
Roll out the dough onto a floured work surface to a thickness of about 5mm and cut out your shapes or just cut into squares with a knife if you don't have cookie cutters.  Place onto a baking tray, no need to grease or line.
Bake in the oven for 15-20 minutes or until golden brown.  Remove from oven and place on a wire rack to cool.
If you do not use all the mixture roll into a sausage, wrap well in cling film and pop in the freezer, then next time you need biscuits in a hurry slice of rounds and pop in the oven.
