This is a slight variation on a recipe I spotted the Sunday Times Style Magazine. I cooked it last night as I had lots of courgettes and needed a speedy supper- it's all ready in under 15mins! It's lovely and fresh- quite zingy. You can add other greens if you have them- I threw in some leeks and peas too
200g pasta- linguine, tagliatelli or spaghetti work well.
First put your pasta on to cook, then get started with your sauce. Both should be ready at same time.
Sauce:
2 tbsb olive oil
2 cloves of garlic
2 thinly sliced and halved courgettes ( include other veg if you like)
Zest and juice of a lemon
Two tbsps of creme fraiche or double cream
Pinch of cayenne pepper
Salt
Handful of fresh chopped basil (perhaps add some other herbs with this)
Big handful of grated parmesan
Heat the oil and add the garlic and veg with a pinch of cayenne and season well with salt. Cook til the courgettes are soft (but not browned) for about 10 mins over a gentle heat. Take off heat and add the lemon juice, cream, basil and herbs and maybe a tablespoon of water if it is very thick. Season with pepper. Add sauce to pasta. Sprinkle some parmesan and chopped herbs to garnish.
