Really good sausages

Really good sausage are probably the least respected and under utilised of all meats in this country, especially considering the popularity of the breakfast sausage - which are a different product. I can get good sausages in my local market in Midleton from Fingal Ferguson (www.gubbeen.com) through Clodagh Mckenna's stall. Olivier, a dramatic French man who lives in west Cork also does fine sausages, although I can't really advise on where to get them, besides west Cork! At a more commercial level, Superquinn do a good range of sausages but being a Cork man and there being no Superquinn's in Cork, I haven't had found the time to check them out. To be quite honest I'd love to hear of any local butchers doing good sausages.

For really good sausages, first and foremost it's about taste, and only you can decide this. Other differences from the regular breakfast sausages are they are not always made from pork, they are usually flavoured with herbs, spices, garlic or even alcohol and they are -for no good reason I might add - usually bigger.

Best Sausages in Ireland

Seeing as you were looking for a suggestion on great sausages.....Barry John's Sausages.....The Guy who makes them Barry Crowe- in Cavan town is a young guy who started making them out of his fathers butcher business Crowe's...they are just gorgeous!!! Haven't a clue where to get them around the country- but I get them in the butchers- chili and cheese- potatoe and leek- spicy cajun- they a just gorgeous!! Cant remember any other flavours- but trust me- they are definately worth a try!!!!And the quality of the meat used in them is really good- they dont shrink when you cook them- they are great old fashioned bangers with a modern twist in flavouring!

Best Sausages in Ireland

I live in Clonmel , co Tipp and the best sausages I have ever tasted in Ireland are made by pat Whelan at Whelans Butchery. They have a delicious taste and the meat is of superior quality. They never shrink and never pop out of the skins. He also makes BBQ sausages in the summer time and now have started stocking different flavours like sun dried tomatoe and Chilli, Mixed herby sausages. all have been delicious.

Best Sausages in Ireland

I think the sausages from O' Flynns Gourmet Sausage Company in the English Market, Cork, are excellent. They have a great selection-a number of different meats and spices. Fry them with some onions and serve on a crispy roll with fresh tomatoes..tasty stuff! Smile
