These are without a doubt the easiest scones in the world to make. A friend of mine living in New Zealand gave me the recipe and now it is the only one I use.
1 cup lemonade (something like 7up)
1 cup cream
3 cups of self-raising flour
Preheat oven to very hot 220C.
Add lemonade and cream to sifted flour, mix to form soft dough with finger, then place mixture on floured surface. This is a soft wet mix.
Bring together to a 2 cm thickness and cut with a floured cutter.
Place close together on tray, brush with milk and bake for 10 - 15 minutes.
Serve with strawberry jam and loads of softly whipped cream

What kind of lemonade? Fancy squeez your own oranges and lemons or just the clear fuzzy stuff beside the coke in a shop?

Hi - best to squeeze your own and add some sugar. But Club Lemon is also cool
For the scones the best thing to use is 7up or something similar. For drinking make your own with lemons and sugar syrup. You need the bubbles for the scones.
hi my mother in law is a diabetic is there any way of making nice scones or anything with out using sugar
Hey Darren- there is a Jamie Oliver recipe without sugar- if you google him, he has one. My girlfriend made them last week. If you soak the fruit in orange juice first it will add natural sweetness but this is optional. Happy cooking. Sully

I made them with a bunch of foreign students some time ago. They turned out perfect - the scones, not the students - and were wolfed down before you could say "Sayonara!"
