Ingredients:
900g (2lb) cucumber, thinly sliced & unpeeled
3 small onions, thinly sliced
350g (12oz) sugar
2 level tablespoons salt
225 ml (8fl oz) cider vinegar
Combine the cucumber & onion slices in a large bowl. Mix the sugar, salt & vinegar together and pour over the cucumbers. Place in a tightly covered container in the fridge and leave for at least 4-5 hours or overnight before using. Pop any excess in jam jars and it should easily keep for a week in the fridge.
