This is a basic you should have in your freezer at all times, great for pizza, pasta, tortillas etc
Ingredients:
1 Onion
1 Red Pepper
4 Cloves of Garlic
4 tins of chopped tomatoes, or 2-3kg of fresh toms from your glasshouse
100g Tomato Purée
25g brown sugar
salt, pepper
Cayenne pepper/ chilli powder
Olive oil
Fresh Sage, thyme, Marjoram.
Heat 2tbs of good olive oil in a large sauce pan. Gently fry off the chopped onion, garlic and pepper for about 10 minutes. Add a large bunch of fresh herbs, make sure you put plenty of sage in. Fry for another couple minutes to get the flavour out of the herbs. Add your tinned, or if you are lucky enough to have a glasshouse, your peeled and chopped fresh tomatoes. Stir. Add the tomato purée, sugar, pinch of chilli powder, and plenty of salt and pepper.
Cook on a very low heat for about 40minutes. Taste and alter the sweetness, chilli and seasoning. Allow to cool and finally purée to a fine sauce. If you want you can pass the sauce through a sieve to remove the tomato seeds, but I don't normally bother.
The finished sauce should be a nice, think red sauce. I freeze it into small portions and use it for home-made pizzas. Dead handy for quick pasta meals as well.
