Yummy Freeze ahead recipes?

Can anyone help a busy working mum, i batch freeze every few weeks so we (hubby, toddler and I) can have a homecooked dinner every evening. Our current freezer dinners are beef stew, chicken curry, tomato and chorizo pasta sauce, bolognese sauce and chili con carne. Needless to say, we are getting tired of the repetition.

Can anyone suggest any more freezer friendly recipes that only involve me cooking the carb (rice/potatoes/pasta/couscous/tortilla wrap) in the evenings? I'd particulary love a freezer friendly fish pie recipe, or some good chicken freezer dinners.

PS I LOVE LOVE LOVE the carrot and honey soup, it was my mainstay on maternity leave for lunch, tastes so homemade, keep up the good work!

Hi there Esseffe- why don't you try our beef stroganoff recipe (on the recipes page). It's so delcious and the recipe comes all the way from Co. Kerry. There's a risotto recipe there too. I love risotto and it freezes perfectly. Pumpkins are about at the moment. Joey, my better half (sorry Cul!) cooked a beef and pumpkin curry this morning, which we have on the train right now- en route to Dublin.

Braised beef dishes seem to

Braised beef dishes seem to to freeze the best. Texture improves and flavour develops.

Beef curry is a good one, a simple on made with braising beef, pineapple etc.

Check the recipe selection for my chilli con carne recipe. It's probably the best as it has everything in it, plus you can serve it with rice, bread, salad, potatoes, anything!

The Portuguese stew is a bit different and also freezes well.

Shepherds pie or cottage pie is great, lift it out, bung in oven. Same with lasagne.

You can also make paprika beef casserole (basically like stroganoff but made with cheaper chump or braising steak and cooked gently and flavoured heavily with paprika, chilli, red peppers etc.) I'll get a recipe up soon.

Pork dishes... you can make a simple pork and mustard cassarole with onions, garlic, diced pork fillet, mushrooms, creme fraiche, mustard (english, grainy, dijon) and white wine. Can be served with mash, or brown rice and salad.

There's a bit of variety to start with!

I freeze lamb Tagine for the

I freeze lamb Tagine for the whole family, my one year old and three year old love it. Hamburgers are another great staple to have in the freezer. I have started making chicken burgers and beef burgers and freezing in portions, once again perfect for the whole family. I make mini burgers for the kids. There is a lovely fish pie recipe on the recipe page which would freeze very well.
